On this 30 Day raw food adventure, I have come across many amazing raw recipes, far more than I could possibly try or profile individually. I don’t want you to miss out, so today I’m going to do a fun roundup of the ones that look especially intriguing.
One of our favorite breakfast treats for our baby girl is chia pudding. There are lots of creative ways to make this, and here’s one for Vanilla Almond Chia Breakfast Pudding by Nourish the Roots that we can’t wait to try. To keep it raw, make the almond milk yourself (sooooo much better than store-bought anyhow) and use raw honey instead of the maple syrup.
A lot of foods you would think are raw, actually contain cooked ingredients. A great example of this is hummus. It sounds raw, and of course we eat it cold so it feels raw, but it’s made from chickpeas that have been cooked. Here’s a great recipe for a Raw Sprouted Chickpea Hummus from Small Footprint Family.
One of my favorite raw snacks is kale chips. The key to making them raw is to “cook” them in the dehydrator rather than in your oven. There are many different ways to make them and here’s a list of seven ways to make kale chips from Soundness of Body and Mind to get you started.
It wouldn’t be a complete raw recipe roundup without a good veggie smoothie. This Turbo Nutrient Booster Veggie Smoothie Vitamin Powerhouse (how’s that for a compelling title??) from Green Thickies looks delicious and seriously nutrient-packed. The only question is whether it’s really a cold soup or a smoothie… You say tom-ay-to, I say to-mah-to.
One of the challenges of eating raw is to find some easy snacks for when you’re on the go. These Cherry Chocolate RawBars ® from Freshly Grown fit the bill quite nicely!
We’re suckers for ice cream, and this Raw Strawberry Ice Cream by Completely Nourished that looks super yummy.
Here’s a raw recipe served at An Oasis of Healing in Mesa, AZ, where I had cancer treatment.
Chocolate Brownies
Brownies:
3 cups walnuts
6-8 dates, soaked (save water)
1/2 cup cocoa powder
Place all ingredients in a food processor and blend until mixture forms a ball. If it is too dry, add a bit of water from the dates until it does. Place mixture in a 9″ pie plate and spread level.
Icing:
1/4 cup cocoa powder
1-2 tablespoons coconut oil, melted
1-2 T agave nectar
Place all ingredients in a bowl and whisk until creamy and smooth. Sp[read with an offset spatula on top of the brownies. Refrigerate several hours or overnight. Slice into thin pie wedges to serve. Keeps at least a couple of weeks in the fridge – if you don’t gobble it up!
