Easter is around the corner and usually that means tons of sweets. While I’m no stranger to the occasional indulgence, I’m always on the lookout for making treats that are not only yummy but really good for you, too. Today, I have an absolutely delicious treat that works perfectly for Easter (or any other time of the year…)
I have been playing around a lot with gelatin lately and absolutely love this wonder superfood. It is one of the best sources of pure, unadulterated protein out there and I find myself adding it to everything. While gelatin isn’t a complete protein, it’s an excellent source of the amino acids glycine and proline, which many of us don’t get enough of in our diets. Furthermore, gelatin is what we call a “protein sparer” or “protein extender”, which means it helps the body make better use of the other protein we are eating. Cool, right? Gelatin is also great for your hair, skin and nails and amazing for your joints. It’s great for your digestion and is actually plays a key role in healing leaky gut. I could go on and on about the benefits, but I’ll save that for another post. Let’s get to the fun stuff!
For this recipe, I wanted to have four Easter colors, using superfoods for flavor and coloring. You’ll make one base with coconut milk, and then use different superfoods to get these four colors:
Green – with peppermint extract and chlorophyll
Yellow – with lemon juice and turmeric
Pink – with strawberries
Purple – with blueberries
Here’s what you’ll need:
2 cups coconut milk (or make your own coconut milk like this!)
2 cups filtered water
1/4 cup sweetener (raw honey is our preferred, but you can also use maple syrup or coconut sugar)
3/4 cup gelatin (quality is incredibly important here)
For green gummies:
1/4 tsp peppermint extract
1 tsp liquid chlorophyll (this is a great supplement to have around the house anyhow – I add some to my morning smoothie or green drink)
For yellow gummies:
1/4 cup lemon juice
10 drops liquid turmeric (you could also use 1/4 tsp turmeric spice – I just prefer the drops and I use them in my tea)
For pink gummies:
1/4 cup frozen strawberries
For purple gummies:
1/4 cup frozen wild blueberries
Equipment:
Medium sauce-pan
Whisk
Immersion blender (optional)
Silicone candy molds (you can get these in all sorts of creative shapes and sizes – we have a bunch on hand)
Magic bullet or other small blender
Turkey baster (optional but so handy)
Step 1: Create your base
Combine coconut milk, filtered water, sweetener and gelatin in a medium-sized saucepan on medium-high heat. Whisk as the liquid heats, mixing the gelatin into the liquid well (you don’t want clumps). You can use the immersion blender if you like – just make sure you don’t mix it too vigorously as it will foam up.
Step 2: Make your green gummies
Remove 1 cup of base mixture from pan and put in your small blender. Add chlorophyll and peppermint extract and purée until thoroughly mixed (just a few seconds).
Using the turkey baster, fill the molds with the green gummy mixture. Freeze for 5-10 minutes or until set. Remove from freezer and wait a few minutes, then remove from molds.
While the green gummies are setting, wash out the blender and start making the yellow gummies.
Step 3: Make your yellow gummies
Remove 1 cup of base mixture from pan and put in your small blender. Add lemon and liquid turmeric and purée until thoroughly mixed (just a few seconds) .
Using the turkey baster, fill the molds with the yellow gummy mixture. Freeze for 5-10 minutes or until set. Remove from freezer and wait a few minutes, then remove from molds.
While the yellow gummies are setting, wash out the blender and start making the pink gummies.
Step 4: Make your pink gummies
Follow the same process as with the green and yellow gummies, using the strawberries to color and flavor the gummies. You’ll need to blend them a little longer to make sure the strawberries have been well blended.
Step 5: Make your purple gummies
Follow the same process as with the other gummies, using the blueberries to color and flavor the gummies. You’ll need to blend them a little longer to make sure the blueberries have been well blended.
These gummies store in the fridge for a couple of weeks (although I have to confess I’ve just heard that… they never last that long in our fridge to try!!)
