We’re in the middle of a heat wave here in LA, and the other day Chef James made magic happen in a blender. He whipped up some watermelon, poured it into some popsicle molds, and a few hours later we were munching on some seriously delicious and wildly refreshing treats. No added sugar, nothing fancy.

Here’s how he did it:

Ingredients

1/3rd of a medium-sized seedless watermelon, rind removed (about 600 grams, or 2.5 cups). You can use watermelon with seeds, but you’ll want to pull out the seeds before blending.

Juice of 1 lime (you can use about 1/2 tsp of zest as well)

Equipment

A good blender. This is what we use.

A kitchen scale (optional – but you’ll get the most accurate measurements that way – we’ve started using one a lot lately and love it)

Popsicle molds – like this. (You can also use ice cube trays with popsicle sticks cut in half and stuck into them.)

Directions

Put watermelon and lime into your blender and purée until smooth. Pour mixture into your popsicle molds, and freeze for several hours until set. Enjoy!
