We’re in the middle of a heat wave here in LA, and the other day Chef James made magic happen in a blender. He whipped up some watermelon, poured it into some popsicle molds, and a few hours later we were munching on some seriously delicious and wildly refreshing treats. No added sugar, nothing fancy.
Here’s how he did it:
Ingredients
1/3rd of a medium-sized seedless watermelon, rind removed (about 600 grams, or 2.5 cups). You can use watermelon with seeds, but you’ll want to pull out the seeds before blending.
Juice of 1 lime (you can use about 1/2 tsp of zest as well)
Equipment
A good blender. This is what we use.
A kitchen scale (optional – but you’ll get the most accurate measurements that way – we’ve started using one a lot lately and love it)
Popsicle molds – like this. (You can also use ice cube trays with popsicle sticks cut in half and stuck into them.)
Directions
Put watermelon and lime into your blender and purée until smooth. Pour mixture into your popsicle molds, and freeze for several hours until set. Enjoy!
We had these for Father’s Day dessert. Delicious! I put in less lime than called for, thinking it might overpower the watermelon flavor. It was a mistake – any bite that had some zest in it tasted better than the non-zest areas. My question is: how much lime juice in volume do you consider 1/2 a lime?
It really varies depending on the lime, but usually it’s about a tsp. And yes, i learned the lemon/lime tip from Chef James. It really brings out the other flavors nicely.
I make these for my kids all the time… I also add a bit of kale, and beet (to get the red colour back:)
My kids still LOVE them and I love it when they eat them:)
Delicious additions, Monika! Sounds yummy 🙂
What a super simple treat for my grandkids to make with me. It’ll be OUR treat too of course! LOL Thank you for the simplicity of it!
Just in time! Emily my grandaughter is visiting today. I am going to have her help me make popsickles! The Watermelon ones sound perfect!!
