Here’s Chef James with the fabulous Sia showing us how to make a super fun after-school snack: secret ingredient popcorn. Can you guess what the secret ingredient is?

Yield: makes four half cup servings.

Ingredients:

2 tablespoons ghee (clarified butter) or unrefined coconut oil

1/2 cup organic popcorn

2 tablespoon melted butter or extra-virgin olive oil

1 tablespoon nutritional yeast [shhh! This is the secret ingredient]

1 teaspoon smoked paprika

1/2 teaspoon granulated or powdered garlic

1 teaspoon dried oregano

1/4 teaspoon freshly ground black pepper

1/2 teaspoon salt (or less if using salted butter)

Directions:

  1. Melt ghee or coconut oil in a 5-quart pot over medium heat. Once the oil is hot, add the popcorn kernels. Leave on heat as long as popcorn is popping. About 2 minutes or until popping has subsided.
  2. In a small bowl, combine the nutritional yeast, paprika, garlic, oregano, black pepper and salt. Mix with a small whisk or spoon until incorporated.
  3. Remove pot from the heat, emptying the popped corn into a big bowl or clean paper bag. Pour the melted butter or olive oil over the popcorn. Sprinkle the seasonings over the popcorn. Mix well with clean hands or a spoon. If using the paper bag, cinch shut and shake the bag vigorously coating the popcorn.
  4. Enjoy!
